This week, we’re diving deep into the rich culinary heritage of the Indian coastline to bring you a recipe that’s close to our hearts: the <strong>“Sungta Masala Rassa”</strong> – a spicy, soul-warming prawns curry that combines old-world charm with new-age zing.</p>

<p class="wp-block-paragraph"><strong>What’s in a Name?</strong></p>



<p class="wp-block-paragraph">‘Sungta’ means prawns in Konkani, and ‘Rassa’ is the Marathi word for a rich, flavorful gravy. But what makes our <strong>Sungta Masala Rassa</strong> special is the <strong>layering of traditional spices with a secret blend of sun-dried kokum, roasted coconut, and a hint of smoked chili oil</strong> – an innovation that adds depth and character to this humble dish.</p>

<p class="wp-block-paragraph"><strong>Ingredients:</strong></p>



<p class="wp-block-paragraph"><em>For the masala paste:</em></p>

<li>1 cup grated fresh coconut</li>



<li>4-5 dry red chilies</li>



<li>1 tsp coriander seeds</li>



<li>1 tsp cumin seeds</li>



<li>1 tsp fennel seeds</li>



<li>4 garlic cloves</li>



<li>1-inch ginger</li>



<li>1 small onion, chopped</li>



<li>1 tsp poppy seeds</li>



<li>1 tsp oil</li>
</ul>



<p class="wp-block-paragraph"><em>Main curry:</em></p>



<ul class="wp-block-list">
<li>300g medium prawns (cleaned and deveined)</li>



<li>1 medium onion, finely chopped</li>



<li>1 small tomato, chopped</li>



<li>1 tsp turmeric powder</li>



<li>Salt to taste</li>



<li>1 tsp kokum extract or 2 pieces of kokum</li>



<li>Fresh coriander leaves</li>



<li>1 tsp homemade smoked chili oil (optional but recommended)</li>
</ul>

<p class="wp-block-paragraph"><strong>Preparation:</strong></p>



<ol class="wp-block-list">
<li><strong>Make the Masala:</strong><br>Roast all masala ingredients in a little oil until aromatic. Cool and grind to a smooth paste using a little water.</li>



<li><strong>Cook the Base:</strong><br>In a deep pan, heat some oil. Sauté onions until golden, add chopped tomato, turmeric, and salt. Cook until soft.</li>



<li><strong>Add the Masala:</strong><br>Stir in the ground masala paste and cook on medium heat till oil begins to separate.</li>



<li><strong>Build the Curry:</strong><br>Add 1.5 cups of water to make a gravy. Let it simmer for 5-6 minutes.</li>



<li><strong>Add Prawns &amp; Flavor:</strong><br>Drop in the prawns and kokum. Cook covered on low flame for 5 minutes, or until prawns are just cooked. Add chili oil for a final flavor kick.</li>



<li><strong>Garnish &amp; Serve:</strong><br>Sprinkle fresh coriander and serve hot with steamed rice or neer dosa.</li>
