Intro:

At Agarikoli Foods, the ocean is more than just a horizon—it’s a pantry of inspiration. One such gem from the coastal treasure chest is Bombay Duck, locally called “Bombil”. Contrary to its name, it’s not a duck at all, but a soft, fleshy fish that’s a favorite along the Konkan and Mumbai coastline.

Today, we’re giving this coastal classic a golden, crispy makeover with our signature “Bombil Fry”—light, crunchy, and bursting with umami. Pair it with sol kadhi or a steaming plate of rice and dal for an unforgettable coastal feast.

Why You’ll Crave It:

Light, flaky texture inside with a crisp, spiced coating

Perfect as a starter or side dish

Ready in under 30 minutes

Brings authentic coastal flavors right to your plate

Ingredients:

6 fresh Bombay ducks (cleaned and butterflied)

1 tsp turmeric powder

1 tsp red chili powder

1 tsp ginger-garlic paste

½ tsp garam masala

Salt to taste

2 tbsp lemon juice

½ cup rice flour (or semolina for extra crunch)

½ cup fine rava (optional, for a coarser texture)

Oil for shallow frying

Preparation:

Marinate the Fish:
Pat the bombil dry. Mix turmeric, chili powder, ginger-garlic paste, garam masala, salt, and lemon juice. Gently coat the fish in this marinade and let it rest for 15 minutes.

Coat for Crunch:
In a flat plate, mix rice flour and rava. Dredge each fish gently in this mixture, ensuring an even coating on both sides.

Fry to Perfection:
Heat oil in a flat pan. Shallow-fry the fish on medium heat until both sides are golden and crisp. Avoid overcooking to retain the soft texture inside.

Drain and Serve:
Place the fried bombil on absorbent paper. Serve hot with lemon wedges and a side of green chutney.

Serving Suggestions:

As a crispy starter with mint chutney

Alongside kokum saar and rice

Wrapped in a soft roti with onions and green chutney for a quick bombil roll

Agarikoli Tip:

To reduce sogginess, always pat dry the fish thoroughly before marinating. Use chilled rice flour for an extra light and crispy crust.

Final Bite:

Bombil Fry is a dish that’s light on effort but rich in flavor—where the crispness of the crust meets the soft, melt-in-the-mouth interior. It’s comfort food, it’s nostalgia, and above all, it’s a piece of the coast served on your plate.

At Agarikoli Foods, we celebrate flavors that connect generations. Try this recipe and bring home the taste of the sea—one crispy bite at a time!

Fire & Flavor: “Sungta Masala Rassa” – A Coastal Classic with a Fiery Twist

Intro:

At Agarikoli Foods, we believe in preserving traditions while adding a spark of innovation. This week, we’re diving deep into the rich culinary heritage of the Indian coastline to bring you a recipe that’s close to our hearts: the “Sungta Masala Rassa” – a spicy, soul-warming prawns curry that combines old-world charm with new-age zing.

Whether you’re reminiscing about your Konkan roots or simply craving something deliciously coastal, this dish is bound to steal the spotlight at your next meal.

What’s in a Name?

‘Sungta’ means prawns in Konkani, and ‘Rassa’ is the Marathi word for a rich, flavorful gravy. But what makes our Sungta Masala Rassa special is the layering of traditional spices with a secret blend of sun-dried kokum, roasted coconut, and a hint of smoked chili oil – an innovation that adds depth and character to this humble dish.

Ingredients:

For the masala paste:

1 tsp kokum extract or 2 pieces of kokum

Fresh coriander leaves

1 tsp homemade smoked chili oil (optional but recommended)

Preparation:

Make the Masala:
Roast all masala ingredients in a little oil until aromatic. Cool and grind to a smooth paste using a little water.

Why You’ll Love It:

High in protein, low in carbs – perfect for clean eating

Final Bite:

Sungta Masala Rassa is more than a curry – it’s a journey through coastal kitchens, smoky spice trails, and the rich aroma of Sunday lunches by the sea.
